What The Heck Is Pit Beef Anyway? Good Question: Most folks have never tasted "Real Pit Cooking". The art of slow roasting meat in a covered, hardwood charcoal lined pit was developed BD (before dirt) or shortly thereafter. Some how over the years, the name survived but people forgot about the complex cooking process that gave meat such a wonderful taste and tenderness. We have all eaten so called pit sandwiches that were as tough as leather and had a flavor closer to burning newspaper than sweet hardwoods. Don't blame the meat! It's just not possible to get good hardwood smoked flavor and melt in your mouth tenderness with the charcoal or propane grills that most caterers use.
